Recommended:

  • Wittenburg, Visual Special Effects Toolkit in C++, ISBN: 0471132209. Wiley Publishers, 1997 
    Addresses hand-segmentation, basic chromakeying, and provides code to help with compositing. Author is humble, but really goes further than most in giving advice to tool-makers.
  • Choose one of these two, depending on which product you like better for doing your editing (and possibly plugin-writing):
